Soft foods are highly complex biopolymers with an inherently intricate constitutive behaviour. Analytical solutions for predicting their behaviour and/or transformation during complex industrial or oral/gastric processes are not possible. This talk illustrates how engineering numerical simulations can be used to help unravel the mechanics of soft foods, with an emphasis on the impact of the small scale microstructure on the larger scale bulk behaviour of these materials.
